This uncooked Italian pork sausage is traditionally served with lentils on New Year's Day, but ours is too special to be eaten only once a year! This cotechino has a fine texture even after boiling, and none of the acrid taste that some of the pre-cooked versions have. If you've never tried cotechino on the grill, you'll be amazed at how this one tastes cooked over an open flame.
The salami is made at Licini Brothers in Union City, NJ. It's shipped from frozen in airtight cooler bags via Two day Overnight Delivery. (Two-day Delivery is available in Cooler Weather.) Sausages are shipped Monday to Wednesday Only to insure safe delivery. Meat is vacuumed packed!
All sausages are gluten-free.

The cotechino Licini Brothers make is the best. We have been purchasing these for years.
I would have given them a 5 star rating but Licini Brothers advertise 1lb to 1.25lbs per cotechino and mine were only 14-15 ounces.
